Peach Cherry Crumble
Peach season is one of my favorite fruit seasons of the year! But you don’t need fresh peaches for this dessert–I used frozen organic peaches straight from the bag. Fresh fruit would totally work, but might alter the cooking time a bit.
Hope you love this one as much as my family does! As far as desserts go, making a crumble or a crisp is one of my favorites. It’s very minimal prep and is relatively lower in sugar than your traditional dessert options. Feel free to use less sugar than what I used here if you like, too!
Ingredients:
10 oz. bag of frozen peaches (or sub fresh. Do not sub canned.)
3 cups of pitted frozen cherries (fresh would also work)
1/2cup + 1 TBL brown sugar
1 cup rolled oats
1 cup flour (I used a gluten free blend, but any will work)
1/2 cup refined coconut oil
1 TBL vanilla extract
2 TSP cinnamon
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Toss peaches, cherries, and 1 TBL brown sugar in shallow baking dish (8×8 or 9 in. round works best)
- In a separate bowl, combine brown sugar, flour, oats, cinnamon, and vanilla, and mix thoroughly to combine.
- Cut in the coconut oil (it should be solid) until it all comes together and small crumbs form. Sprinkle mixture evenly on top of fruit and bake for 45 min or until the fruit is softened and bubbly. I like to sprinkle more cinnamon on top for good measure!
- Let it set and cool for about 20 mins. Best served warm with some ice cream!
