BBQ Rubbed Salmon
My husbands favorite dish at The Cheesecake Factory is the BBQ salmon. Ever since he ordered it years ago, I’ve had it in my head that I could make it at home. The ingredients are minimal and the filets broil in the oven in under 10 mins. It’s a super fast meal thats sure to impress. I serve it up with mashed potatoes because that’s how they do it at The Cheesecake Factory, too.
Ingredients:
wild caught salmon filets (coho, king, or alaskan are my favs)
1 TBL coconut sugar (brown sugar will work also, but it’s a little too sweet IMO)
1 TSP garlic powder
1 TSP mustard powder
1/4 TSP cumin
1/2 TSP salt
pinch of black pepper
2-3 TBL butter
Directions:
- Prepare the salmon filets on large shallow baking dish and pat dry.
- Mix all the sugar, dry spices, salt, and pepper in a bowl and sprinkle generously on top of salmon
- Dot each piece with a tab of butter…a little or a lot. You decide.
- Broil the salmon on high, with rack positioned at top of oven. Depending on the size and thickness of your filets it will take between 5-10 mins. Mine was about 7. Keep an eye on it. Remove when flesh is firm and skin underneath has shrunk, but before little while dots form on the top. ENJOY!
